With a delicate, buttery texture, and a milky-sweet nuttiness, our Vache is a classic cellar-aged Tomme, typical of the Alpine regions of France, Italy and Switzerland. A hint of apple-pear fruitiness suggests a fine pairing with our Sauvignon Blanc, or a high-quality dry Cidre. $20/lb.

 

 

 

 

 

Goat's Milk Cheeses:

Alpine

Named after our French Alpine goats and its snowy white interior, our Alpine cheese is an exquisite cellar-aged goat's milk tomme. Nutty and herbal flavors derived from the pasture plants predominate, with Macadamia nut, coconut, bay leaf and vanilla flavors melding into a delightfully lingering aftertaste. Pairs well with our Pinot Noir, and the younger, fruitier reds such as our 2005 Holiday Blend. $24/lb.
